- You need 3/4 cup of Spinach leaves.
- You need 1 of big ripe banana.
- It's 1 cup-2tbsp of All purpose flour or mix of wheat and maida.
- Prepare 2 tbsp of cornstarch.
- It's 1 teaspoon of baking powder.
- Prepare 2 tbsp of milk.
- Prepare 1/4 cup of oil.
- You need 3/4 cup of powdered sugar.
- You need 1/4 teaspoon of vanilla extract optional.
Spinach Banana Cake instructions
- Preheat oven to 180 and line cake tin.
- Blanch and blend spinach to smooth puree. Mash ripe banana and keep it aside.
- As mentioned, remove 2 tbsp flour from 1 cup. Add cornstarch and baking powder. Sieve mixture twice.
- In a bowl, mix banana, spinach puree, oil and vanilla extract.
- Add sugar to dry ingredients and mix well. Slowly add wet ingredients and mix.
- Mix batter until well combined. Pour into prepared pan.
